- Identification of useful indicators (KPIs) for monitoring food safety in the various nodes of the reference supply chain;
- Identification of the tools for measuring the KPIs, to collect information and develop an adequate treatment;
- Development of a tool for risk assessment along the supply chain;
- Definition of prevention and protection measures based on the monitored data and evaluation of the effectiveness of the measures defined;
- Analysis of the extensibility of the results to other supply chains and other contexts.
